TRIA—An American Brasserie to debut at The Henry in Dearborn April 28


Dearborn, Michigan. April 18, 2011 — TRIA — An American Brasserie will open inside The Henry (formerly The
Ritz-Carlton, Dearborn) on Thursday, April 28 as a completely transformed restaurant experience with a
distinctive menu and service approach. Additionally, TRIA will feature an Artisan Bench where chefs will teach,
demonstrate and engage guests as part of the dining experience. TRIA will offer uniquely-prepared American
cuisine designed for sharing.
According to Executive Chef James “Woody” Woodward, being able to create a whole new dining concept for
The Henry has been an exciting experience. “Based on what we know about the trends in dining out, we
wanted to create a fun, casual and engaging atmosphere and the introduction of the Artisan Bench is part of
that. Each night we will have unique demonstrations with tasting samples to educate and entertain our
guests—from learning about Risottos to the art of Charcutrie, we will have something for everyone each night
in TRIA,” said Woodward.
TRIA is Latin for “three joining as one” and with the new name and transformation to a modern and artistic
hotel, The Henry’s innovative dining outlet is designed to encourage guests to taste, savor and share the
menu. Guests who dined at the award-winning Grill at The Ritz-Carlton will enjoy the new design of TRIA
which includes communal tables, the custom-built Artisan Bench and all new furnishings.
The seasonal American menu highlights local and sustainable foods and embraces the sharing and tasting of
cuisine among diners. Specialties include seafood cocktail with poached shrimp and jumbo lump crab, pork
platter with roast tenderloin, braised shoulder and crisp pork belly, ‘Drunken’ chicken with red wine,
mushrooms and pearl onions, and seared diver scallops with Beluga lentils. Flatbreads and pasta dishes are
also signatures of the new restaurant. The chef’s creativity takes a twist with house made tator tots made of
crispy pillows of golden brown potatoes.
To celebrate the grape, TRIA’s Wine Director Todd Cummins has assembled more than 50 wines by the glass
available in four sizes, including an 8 ounce quartino, meant for sharing. He will also present Barrel-aged
cocktails where special oak barrels will house the latest cocktails and liquors. Technology will play a key role
as TRIA’s wine list will be featured on iPads for guests to review wines by varietals, country, price, by the glass
and specials chef recommendation to pair with specific food items. The Henry has teamed with Atwater
Brewery to create “The Henry Amber Ale”, a private label soon to be available in bottles. This exclusive
house label is one of over 60 beers offered from primarily Michigan craft brewers.
“In June of 2010, this property became The Henry, An Autograph Collection Hotel. We have embarked upon a
multi-million-dollar renovation which includes bringing a modern and artistic look to all 308 guest rooms, our

TRIA will be open for breakfast on weekdays from 6:30 am-11:30 am and weekends from 6:30 am-noon;
lunch will be served from 11:30 am-6:00 pm weekdays and noon-6:00 pm on Saturday, Sunday from 12:00pm
to 10:00pm; and dinner will be available from 6:00pm-10:00 pm Monday through Saturday. Happy Hour at
TRIA will be Monday-Saturday from 4pm-6pm with feature pricing for all draught beer, wines by the glass and
well drinks. Several food offerings including Flat Breads, Pasta, Charcutrie, and other chef specialties will be
