SOUTHFIELD — Chef Don Glees has joined Bagger Dave’s Burger Tavern as a corporate chef. He will be based in the company’s Bloomfield Township test kitchen.
In this position Glees will work in partnership with Jeff Nickel, director of food and beverage, to create new menu items and themes; ensure guest satisfaction; build and maintain vendor relationships; develop and implement quality standards for food quality and presentation; define and implement food preparation procedures; set product purchasing specifications; prepare and monitors food cost budgets; and oversee marketing reviews of guest feedback.
Glees brings with him more than 25 years experience in the food service industry. Prior to joining Bagger Dave’s, he served as chef at 123 in Grosse Pointe and at the Grosse Pointe Yacht Club.
