Detroit: The City of Chefs Michigan Dinner of the Decade

Filmmaker Keith Famie and his production of “Detroit: The City of Chefs II” hosted its Dinner of the Decade on May 30 at the Country Club of Detroit in Grosse Pointe Farms. The event was a tribute to James Beard orchestrated by Master Chef Brian Beland and multi-James Beard Award winner Chef Jimmy Schmidt. It included a reception that featured beets roulade, Mangalista lardo, spring mushroom Takousu, and other delicacies. The four-course dinner included cured salmon royale with spring vegetable, Great Lakes walleye with shrimp and ramp bread pudding and tomato curry, rabbit and pork dumplings and summer truffles, and Wagyu beef short rib with forest morels and wild roots. Dessert included dark chocolate, red berries, and hazelnut; petit fours of coffee choux, rhubarb and almond Frangipane tart, and chocolate salted caramel financiers. The goal for the evening was to generate two $5,000 donation scholarships through the Michigan Chef’s de Cuisine for future culinary students in the Oakland Community College and Schoolcraft College culinary programs. A portion of the funds also went to further support the culinary educational work that the James Beard Foundation does nationally for the hospitality industry.
