The Brookshire Restaurant at the Royal Park Hotel in Rochester is undergoing renovations and will reopen in mid-September as the Park 600 Bar + Kitchen, featuring small plates and craft cocktails.
“The inspiration behind the food at Park 600 Bar + Kitchen is to keep it simple yet elevated by adding bold flavors,” says Colin Brown, chef at Park 600 who’s been with the Royal Park Hotel for nearly 10 years. “We will use the best quality products available and include fresh local sourced ingredients which will enhance our guests culinary experience.”
Brown says the 125-seat restaurant will feature special pizzas made in a gas pizza oven and dishes like Asian-spiced pork shank and black pepper bacon rashers. The restaurant will serve lunch, dinner, and brunch.
Renovations include the addition of copper tiling, black walnut seating, white granite, and contemporary light fixtures. Park 600 will feature a 24-seat circular bar with community seating along with a 12-seat pizza-dining zone where guests can watch the chefs prepare meals.
The 143-room Royal Park Hotel, located at 600 East University Dr., features four restaurants, a putting green, and a bocce court. The luxury hotel opened in 2004.
