The Conserva to Open in Ferndale This Saturday

The Conserva, a new Ferndale-based restaurant offering an eight-item, rotating menu that features meats, seafood, pickled vegetables, fresh mustards, and aioli, will open on Dec. 10.

The restaurant, located at 201 E. Nine Mile Rd. on the ground floor of the condo complex Lofts on 9, will offer menu items such as charred octopus with garlic purée, brazed smoked pork belly with soaked raisins, and a brazed oxtail with coconut milk and cashews.

There will also be a snack menu featuring seafood such as Portuguese sardines, anchovies, and tuna, and a full bar with craft cocktails and a curated wine and beer list.

“Our goal is to source the best ingredients, handle them with care, and present them in a manner that’s delicious, fresh, and exciting, all in an environment that’s engaging and fun,” says Matthew Baldridge, chef and owner of The Conserva.

The space can fit up to 60 seats inside and 25 seats will be available on the patio. Eight employees will be working at The Conserva, which gets its name from a European food preservation technique.

The interior of the restaurant has a mix of cement, white washed brick walls, metallic gold accents, and artwork created by Baldridge’s wife, Jana Coumoundouros.

Over the past several years, Baldrige and Coumoundouros’ have held pop-up dinning events at various places, such as The Storefront Gallery in Ferndale and Supino Pizzeria in Detroit.

The Conserva will be open from 5 p.m. to 12 a.m., Wednesday through Saturday.
