Local Restaurant Chain The Big Salad Opens Franchisee Training Center in Harper Woods

The Grosse Pointe-based restaurant chain The Big Salad, offering build-your-own salads, along with soups and wraps, has opened a training center for new franchise owners in Harper Woods as it plans to open 100 stores across the country.

“The goal of our training center is to provide across-the-board consistency in training for both franchisees, and later, our Big Salad team members,” says John Bornoty, president of The Big Salad.

Bornoty says the new, 1,500-square-foot facility, located at 20304 Harper Ave., is home to a training team that comprises both corporate and field staff.

The Big Salad has two restaurants in Ann Arbor, along with restaurants in Grosse Pointe Woods, Novi, Troy, and Charlotte, Mich., near Lansing. Bornoty says The Big Salad will soon have two new restaurants under construction in the Houston area, the chain’s first two Big Salad restaurants outside of Michigan.

The Big Salad, founded in 2008, offers iceberg, romaine, or spinach salads with a choice of 40 toppings and 30 dressings including bacon, artichoke hearts, roasted red peppers, and edamame, and dressings including poppy seed, spicy ranch, and Italian vinaigrette, among others. Pre-designed salad offerings include antipasto, wedge, and apple walnut, and the restaurant also sells sandwiches such as cranberry turkey and chicken Caesar, along with soups and wraps.

Bornoty says the restaurant chain has plans to open 100 stores across the country in the next 10 years, in states such as Florida, Indiana, Kentucky, Ohio, and Pennsylvania.
