Micro-Churn Ice Cream Comes to Downtown Northville

Browndog Creamery and Dessert Bar, a new micro-churn creamery specializing in small-batch ice cream with creative flavors, is set to open next month in downtown Northville.

“Not many people make their ice cream on site, and that’s what really makes us different from everybody else,” says Paul Gabriel, who co-owns Browndog with Brian Scherel. “It is made in a very small batches, and we feel that gives it a much better flavor.”

The store, located at 118 E. Main St., uses resources from local Michigan companies to make up to 80 gallons of ice cream a day, Scherel says.

The business will sell anywhere from 16 to 24 different flavors at a time. Examples include salted caramel ice cream with homemade caramel sauce swirled in, as well as cookies-and-cream, which uses original and golden Oreos.

Additionally, Browndog will have a cookie sandwich bar — where guests will combine homemade cookies and ice cream to make a “sandwich.”

“It’s really about customization and creating a dessert of your choosing,” Scherle says.

The location in downtown Northville was an easy choice for Gabriel and Scherle, who wanted to be in a high-traffic area for its March 6 grand opening.

“Northville is a great location,” says Gabriel, who also owns Stuart’s Ice Cream and Yogurt in Novi. “It is very active and they have a Downtown Development Authority that brings people to the area.”

The 1,900-square-foot space seats 14 people at tables designed by Reclaim Detroit. As the business works toward its grand opening, customers can take advantage of soft-opening specials: $1.50 for a single-scoop, $1 for a waffle cone, and 50 cents per topping.
